Hello! Apple Cake Recipe that Won Star Baker

Last weekend in my newsletter, I mentioned my experience being in a “Great Griffith Bake-Off” for my 12yo niece’s birthday. It’s a longer story, but this is the Star Baker-winning recipe!

Hello! Apple Cake

4 cups apples, peeled, finely chopped

2 cups sugar

2 cups flour

2 tsp soda

1 tsp salt

1 tsp cinnamon

1 ½ tsp vanilla

2 beaten eggs

½ cup oil

Mix sugar and apples to coat. Add dry ingredients. Add wet ingredients. Bake in a loaf pan or 8×8 pan 350 degrees 40 minutes, or until a knife/bamboo skewer/toothpick comes out dry.

Note: In the photo, I used cream cheese frosting to decorate the cake, but I’m not sure it’s a great idea, since the crusty crust is the most delicious part. It was only for show for the party. Leave it off for even better effect.

This is the cake! I used an extra-large star tip to apply a cinnamon cream cheese frosting. Please ignore the “frosting” in my freezer! (It gets so frosty in there so fast!)
